OBJECTIVES
By completing this module, the student should be able to:
- Define what is Gueridon Service
- Recognize and name the necessary equipment for food preparation using the gueridon trolley
- Apply all the service of tile food using gueridon trolley
- Apply all rules, hygiene, safety and proper use of the gueridon trolley
- Prepare the equipment, materials and utensils necessary to prepare food from the gueridon trolley
- Serve food from gueridon trolley according to the rules of restaurant art
- Comply with all rules of personal hygiene, as well as proper attitude and behavior owards customers
- Prepare the following foods:
- Smoked Trout
- Grilled Dover Sole
- Steak Tartare
- Melon with Commandaria
- Oranges with Filfar
- Cherries Flamed with Kirsch
